- preheat oven 375°F
- Peel and grate cassava. The one I bought was 1.37 lb. Afterwards it should be around 1lb.
- Important!!! if it's white, which is a little bitter, it's better to squeeze the juice out and replace it with the same amount of water. I bought a fresh root and grated it, but some recipes I saw mention about frozen cassava. Will try it next time, maybe it'll be easier to grate..
- Mix ingredients.
It has an inviting aroma from the pandan leaves, eggs and coconut milk. More importantly it's extremely easy to make and it's super delicious. Kueh Bingka Ubi is made from grated tapioca (cassava) and baked until the top and sides are crispy brown, which is actually the best part of this kueh. Inside it is soft and chewy and together it makes a great texture. This is one of the many Nyonya delicacies of the Peranakans and it goes well with coffee or tea.
