After oven roasting asparagus, green beans, cauliflower I thought WHY NOT BROCCOLI. The result is crispy on the outside, tender on the inside and a great new way for me to enjoy one of my favorite.

Steps to make Roasted Broccoli:
  1. Prep broccoli. If fresh cut into bite size pieces and go to next step. If frozen boil water (add chicken bullion for added flavor). Add broccoli and drain once a boil is achieved again. Cut into bite size pieces.
  2. In a bowl pour olive oil over broccoli and mix up. Sprinkle bread crumbs, Parmesan, and salt over top. Mix again.
  3. Spread mixture onto a baking sheet.
  4. Bake 20 minutes in a preheated oven set at 450.

Even those who don't like broccoli will like this recipe. Oven roasted broccoli is how Rory, my youngest, came to love broccoli and it is still his favourite way of eating it.
