  2. Place rocket salad in 2 bowls and add chopped tomatoes and cucumber

  5. Cut lemon in half and juice half of it leaving other half for decoration
  6. Add some of the juice to the mayonnaise
  7. Spoon mixture over prawns
  8. Butter the bread and quarter
  9. Serve!

For the Marie rose sauce, combine the lemon juice with the remaining ingredients in a bowl and set aside. Lay the prawns out on some kitchen paper and dab dry. Put into a large bowl and add the shredded lettuce, the mayonnaise, tomato ketchup, lemon zest, Tabasco and paprika, if using. Add the whole prawns and cook until they rise to the surface. Drain and chill in ice-cold water.
