- Make ready 1 kg Japanese plum
- Prepare 1 kg sugar (any sugar such as rock sugar or crystal sugar.)
We make salted Ume (umeboshi), Ume juice and Ume wine (ume-syu). I am sure many people are big fan of Ume-syu, the Plum wine that is quite often served in Japanese restaurants. Instructions to make Japanese plum syrup:
- If you rinse plum, remove any water.
- Remove stem end. (Use toothpicks.)
- Add plums and sugar alternately in a sanitized jar.
- Store the jar in a cool & dark place for 1 month. Shake the jar occasionally. (Don’t open the lid!)
- After a month, it’s time to open the lid. Take plums out. Heat syrup in a pan and bring to boiling.
- Once boiled, add the syrup into a sanitized jar and store in fridge. (Nice golden color!)
- Enjoy with cold water or sparkling water (syrup : water = 1 : 5). Over shaved ice is also a good idea. (You don’t have to dilute!)
If you want to enjoy Japanese plum flavor drink but prefer juice to alcohol beverage, home made plum juice is perfect fit! You can drink it cut with water, soda or even hot water when you want it in cold winter. The goal in making the plum syrup is to extract the plum juice and to get the sugar to dissolve as quickly as possible. If it takes a long time to dissolve the sugar, the liquid starts to ferment. The final steps: Put the strained plum juice into a saucepan and heat on low.
